Kicking Off Football Season with Blueberry Lemon Corn Muffins

Can you feel it in the air?

Fall is creeping up on us and soon my days will be filled with cooler weather, pumpkin recipes (oh, the recipes!) and football.



Last night my alma mater, Georgia Tech, kicked off the 2011 football season against Western Carolina at home in Atlanta.

Before you ask… yes, I really did go to Georgia Tech. In fact, I entered with a declared major in electrical engineering. Electrical engineering – I don’t think I could have picked a major that was more wrong for me.

I wanted to study something like business, but my parents had other ideas for me. I’m glad they were there to push me to do my best, but in doing so, I was pushed into a major that was completely not right for me. Sure, I was great at math and managed to fake my way through science classes, but I can’t say that my heart was in it.



Long story short, I escaped college after an excruciating six years with a degree in Industrial Design. And instead of designing gadgets, gizmos and thingamabobs for a large corporations, I started designing websites. So here I am today.

I can’t say that I have a great deal of school spirit and pride for my alma mater, but I do have a lot to thank my old school for. Attending Georgia Tech brought me to Atlanta, where I have met some of my best friends, I was immersed in the world of technology which has shaped who I am today.



I am very proud that I made my way through Georgia Tech and even graduated with honors. Not too shabby for a girl who just wanted to eat food and take photos!

I believe that college is actually a place for you to learn how to learn and think. Because of the lack of job opportunities for a industrial/product design major, I was almost forced to hone my entrepreneurial skills and teach myself things that I was not being taught.

I learned to design websites, to shoot & edit videos, to manage projects and I discovered my love for photography.



So this is my little seasonal tribute to my old school.

Our school colors are gold and white… and navy blue. This recipe beautifully combines all of these colors, and it also pays tribute to the end of summer with a summer fruit: the blueberry.

Blueberry Lemon Corn Muffins
Recipe Type: Bread

Prep time: 10 mins
Cook time: 25 mins
Total time: 35 mins
Serves: 9
Ingredients
  • 1 cup all purpose flour
  • 3/4 cup corn meal
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • fresh lemon rind from half of a lemon (about 1 teaspoon)
  • 1 egg
  • 1 cup milk (or rice milk, buttermilk)
  • 1/4 cup vegetable oil
  • 3/4 cup blueberries
Instructions
  1. Preheat the oven to 400˚F
  2. Combine the flour, cornmeal, sugar, salt and lemon rind with a stand mixer.
  3. Add the egg, milk and vegetable oil and mix until moistened.
  4. Then fold in the blueberries.
  5. Divide the batter into a pre-greased muffin pan.
  6. Bake in the preheated oven for 22-25 minutes, until the tops of the muffins are slightly golden brown.
  7. Makes about 9 muffins. Serve with some butter if desired, and enjoy!

O.k. We are totally on the same wavelength. I’m planning to make lemon blueberry cupcakes on Monday. I love, Love, LOVE how you’ve styled this shoot! And, they look so good and moist.

I am so glad you created this recipe! I love corn muffins but I never make them because they aren’t all that healthy. But these ones have blueberries and so little sugar! Thankyou for make satisfying my cravings possible!

Definitely! There isn’t much sugar in these muffins, but the sweetness and juiciness of the blueberries make up for it :)

These look super yum! I’m an Auburn grad and ironically, entered as an Electrical Engineering major there, too. Big. Mistake.

Ended up as a Registered Dietitian… two worlds very different from one another, and I’m SO glad!
