Malaysian Chicken Curry in Coconut Milk

There are many variations of chicken curry dishes. This one is a tad spicier and the sauce is thicker, kind of like gravy – thanks to the coconut milk that is added toward the end of the cooking process.

Ingredients (2 servings):
4 chicken thighs – free range, organic
olive oil
2 tbsp. curry powder
1 pinch chili powder
1 large pinch of paprika
1 small pinch of cumin
2 tbsp. minced garlic
1 onion, chopped
2 large potatoes, peeled and cut into chunks
1/2 red bell pepper, cut into long, thin strips
1 cup coconut milk
2 cups water
green onions to garnish (optional)

Let’s cook!
1. Coat the bottom of a large pot (I used a dutch oven) with olive oil and saute onion and garlic for about 1 minute.
2. Add the chicken and cook for 3-4 minutes.
3. Add chili powder, curry, paprika and cumin and stir the mixture well, let cook for about 2 minutes.
4. Add the potatoes, cover the pot and let the mixture cook until the chicken and potatoes are tender, which will be about 30 minutes. Make sure to turn the chicken over about 15 minutes through.




5. Add the red bell pepper after the chicken has cooked for about 25 minutes. Let the mixture cook for another 5 minutes.
6. Now, add the coconut milk and water and mix well. Feel free to add a bit more water if necessary. Let the dish simmer until the sauce thickens.
7. Salt and pepper to taste, if you wish.
8. Garnish with green onions (optional).
9. Serve with steamed jasmine rice and enjoy!

I do love my chicken curry dishes! I’ve never really cooked much with curry before, but I’m really liking it.

I’m starting to fall in love with food styling – it’s so fun! I got these plates from Target a few years ago, they always have some really cute stuff!

Coconut milk is one of my favorites to cook with. I think it adds so much flavor! I can’t wait to try some of my own food styling. Maybe I’ll be able to do something like these pictures.
