Chocolate Chip Banana Pudding with Some Help from the Husband

I grew up eating banana pudding. Yes, me. That Taiwanese girl who grew up in Appalachia.

My parents served it as a dessert selection in the buffet at their Chinese restaurant. Of course, it was the standard vanilla pudding with vanilla wafers and big slices of banana, but I really did eat almost every day it growing up in that restaurant. But, it wasn’t until I moved to the South, that I really had banana pudding.

No one does banana pudding like Southerners. No one.

The most amazing banana pudding I have had to date was a a local barbeque joint in Roswell, Georgia. A little place that is tucked away in a side street in the historic district, they make their banana pudding with big (and I mean, big) chucks of chocolate chip cookies in place of the vanilla wafers. Genius, I tell you.

This recipe for chocolate chip cookies isn’t something mind-blowing or ground breaking, but it is very special to me.

Paul isn’t much of a baker, or a cook for that matter, but he does make amazing chocolate chip cookies from scratch. When we first started dating, he made these cookies for me for my birthday.

I remember it clearly: When I dropped by his apartment after work (that long ago… when I worked for a flash development agency), the smell of freshly baked cookies hit me like a freight train. I was in shock.

Why am I smelling freshly baked cookies?

Who is this guy standing in front of me, covered in flour and proudly offering these baked goodies to me?

Turns out, Paul has been baking these from-scratch chocolate chip cookies since he was little. It was something that he would do with his mom while he was growing up in upstate New York. He’s the youngest of 4 boys, so while his older brothers were away at college, Paul’s mom would bake cookies with him at home.

I’ve already told Paul that he’s going to be the one teaching our future kids to bake these cookies, by the way.

There’s no dessert that brings me home quite like banana pudding with chocolate chip cookies. Scooping bite after bite just feels me up with lovely, gooey feelings of nostalgia.

And now, we have a dessert that’s a nice combination of both of our childhoods.

Chocolate Chip Banana Pudding – serves 8
Vanilla pudding (vanilla pudding recipe, go here)
16-18 chocolate chip cookies (For the Original NESTLÉ® TOLL HOUSE® Chocolate Chip Cookies recipe, go here – we did not add the chopped nuts)
4 bananas, peeled and sliced into 1/4 inch thick round pieces
1 cup whipped cream (see below for recipe)

To assemble:
In a trifle bowl, layer pudding, bananas, cookies, then another layer of pudding, bananas and cookies. Then top with whipped cream.

Optional: garnish with crumbled pieces of cookie or chocolate chips. Refrigerate or serve immediately.

Fresh Whipped Cream – serves 8
1 cup heavy whipping cream
2 tablespoons powdered sugar
1 teaspoon vanilla

To make:
Place the mixing bowl and mixer in the fridge or freezer for a few minutes to chill. Then whip the whipping cream until soft peaks begin to form, then add the powdered sugar and vanilla and mix until combined (about 30 seconds – 1 minute). Refrigerate or serve immediately.
